Autumn Mocktails

As always, for every cocktail blog there’s a mocktail one because not all of us enjoy alcohol and there are lots of refreshingly fruity Autumn mocktails to quench your thirst at your wedding.

Autumn Harvest Punch

2 cups water

2 cups of sugar

4 cinnamon sticks

36 whole cloves

4 cups cranberry juice

2 cups of orange juice

1 ½ to 2 cups of lemon juice

2 tbsp rum flavouring

1 sliced lemon

1 sliced orange

Bring the water, sugar, cinnamon sticks and cloves to a boil then reduce, heat and simmer for 7 minutes before straining out the spices. Add the rest of the ingredients and cook until thoroughly warm. Easy.

Pumpkin White Russian

This is the same as the alcoholic version just without the vodka. It will taste just as delicious. In place of the vodka add a little chocolate syrup instead.

1oz coffee syrup

1oz double cream

1tbsp pumpkin puree (you can get this in cans)

2 tsp pumpkin pie spice.

To make this simply pour everything into a cocktail shaker filled with ice, shake then strain over ice and sprinkle with pumpkin pie spice.

Cranberry Sparkler

Cranberry juice is great to drink on its own and good for you. Here’s a recipe that elevates an already refreshing drink.

2 cups of fresh cranberries

½ cup of fresh orange juice

½ cup of water

¼ cup of maple syrup or honey

Sparkling water

Puree the cranberries, orange juice, water and maple syrup in a blender then strain out the bits. Do this one more time for good measure. Pour into glasses with the same amount of sparkling water and garnish with frozen cranberries.

Fennel Apple Spritzer

Fennel is a great herb, it has a strong aniseed flavour to make this a unique autumnal drink.

1 ½ tbsp fennel seeds

1 cup of sugar

1 cup of water

¼ cup apple juice

1 tbsp fresh lemon juice

1 ¼ cup sparkling water

Grind the fennel seeds then add to the sugar and water in a small saucepan and bring to the boil over a medium heat until the mixture thickens. Remove it from the heat and allow it to cool before straining.

Add the cool fennel syrup to the apple and lemon juice, then top with the sparkling water and garnish with apple slices.

Nice pear

This is another refreshing pear drink that will quench any thirst.

2oz pear juice

1oz lemon juice

3 ½ tsp Rosemary syrup

For the Rosemary syrup add 1 cup of water, 1 cup of sugar and ¼ cup rosemary leaves to a small saucepan and bring to the boil. Once it starts to thicken, take if from the heat and let cool before straining out the rosemary leaves.

Add all the ingredients to a cocktail shaker with some ice and combine then strain into a glass and add some soda water.
